How to prepare homemade pizza calzone recipe? One day I messed up on sliding a pizza into the oven; part of it folded onto itself on the baking stone. I couldn’t take it back out, and I couldn’t bake it the way it was. So I finished the job, folded it over (and not too neatly), encasing the filling entirely in the dough. Thus, by making the best of a bad situation, I “discovered” homemade calzone. Intentionally made calzone is better than that, since the filling is neatly enclosed in the dough. While you can fill a calzone with any pizza toppings, it’s best with cheese and something else, rather than all cheese. The filling should be substantial and fairly dry; very wet fillings will leak or make the dough soggy; that’s why drained ricotta is an ideal base. Serve calzone with tomato sauce for dipping or topping. Or naked, as they usually do in Naples, where it’s from. Here are ingredients and directions:

1. Knead the dough lightly and cut it into 2 pieces. Form 2 balls and put them on a lightly floured surface. Sprinkle with a little more flour and cover with plastic wrap or a towel; let them rest for 20 minutes. If the ricotta is very moist, drain it in a fine-meshed strainer for 10 minutes or so.
2. Combine the sausage, ricotta, mozzarella, and Parmesan. Taste and add salt, if necessary, and pepper. Heat the oven to 350°F.
3. Roll or lightly press each dough ball into a flat round, lightly flouring the work surface and the dough as necessary (use only as much flour as you need to). Let the rounds sit for a few minutes; this will relax the dough and make it easier to roll out. Roll or pat the dough into an 8- to 10-inch round on a floured pizza peel or lightly oiled baking sheet.
4. Put half the filling into the middle of each dough round. Moisten the edges with a little water. Fold one edge over onto the other and press closed with your fingertips.
5. Bake the calzones on a baking sheet or directly on a baking stone for 30 to 40 minutes, or until nicely browned. Serve hot or warm.
